I LOVE the NFSC recipe for my decorated cookies. I have an order for a Happy Boss' Day cookie bouquet on Monday, only she is asking for peanut butter cookies. I was wondering if there is a peanut butter cookie recipe that will hold up like the NFSC or has anyone used the NFSC recipe and doctored it in some way to make them peanut butter?????
Thanks so much in advance for help!!!!
Trish
I would love a recipe for this as well. Peanut butter are my favorite cookies. So, here's another bump hoping someone else has such a recipe to share. I'm keeping my fingers crossed.
cryssi, I had wondered if something like that could be done also.... I am kinda new to this cookie thing, so I wasn't sure how that kinda thing worked....
I've made a peanut butter fondant beffore and put on the NFSC......Just take peanut butter adn add powdered sugar until it forms a dough.....it's yummy!!! Then I just rolled it out and layed it on the cookies when they came out of the oven.......you do get the pb color....but they look gorgeous for winnie the pooh cookies or whatever.......especially if you decorate with choc. royal......or even just melted chocolate!! Yummy!!
Thanks, KHalstead, I will have to try that sometime. I bet they do look SO cute for Winnie the Pooh cookies!!! That would be a perfect color match!!
test it out with a half batch of NFs...that way you wouldn't have to throw out a full batch if it wasn't quite what you expected...
Love the idea of the PB fondant. I'd forgotten about making a dough with PB and powdered sugar...I used to make this and send to kindergarten with my kids when we had to supply an "educational" snack. Give them the dough, some mini-cookie cutters, and crackers. The kids loved rolling it out and decorating the crackers.
Trish,
I just found this recipe...sounds like it's worth a try?

The King Arthur Flour Cookie Companion has a peanut butter cutout recipe (page 100) that I plan to try. It may be available at your library.
Thanks everyone for their help!! Cryssi, I think I am going to have to try that recipe!!! Thanks so much for finding it! This sounds exactly like what I need! I will post pictures and let you guys know how they turn out.
NeeNee - Please post your results if you try the recipe posted by cryssi. I have a recipe and it tastes great but it doesn't hold it shape very well and I hate that! I'm thinking of trying the suggested recipe but I'll wait to see what you think of it... Thanks!
tayesmama, I will let you know how they turn out. I have to go pick up my boys from school and then I am headed to the kitchen to start baking!!!! I've got the cookies and a cake to do this weekend. I will post how the cookies turn out (and taste!!) as soon as I can!!
Ok everyone, I tried the recipe and they didn't turn out quite like I wanted. I let the dough stay in the fridge for a couple of hours like it stated to let it firm up; still had a hard time working with it. Once I had them rolled out on my mats, and the cookies cut, I stuck the mats in the freezer for several minutes (like I do with the NFSC). Took them out and baked them. They did not hold their shape well at all. My DH ate one, and said it tasted great!!! So that's a plus, right??? I think I am going to try your other suggestion, cryssi, about subbing some of the peanut butter for the butter in the NFSC recipe and see how that does. Thanks everyone for your help!!!! I'll let you guys know how this goes!!
That's one thing I was thinking...that they may not hold their shape. Also, I wonder about the oil in the peanut butter affecting the icing if you're going to use royal or Antonia74's icing to decorate with? Meaning, if the PB makes the cookie a little bit oilier than the reg. NFSC recipe, would it break down the royal icing once it's on the cookie? You know how if your bowl that you make the icing in has even the tiniest bit of grease or oil in it somewhere, the royal will not come out right? Just a thought.
Ok, I ended up making the NFSC recipe (I halved it), and where it called for 1 cup of butter, I used 1/2 cup butter and 1/2 cup peanut butter. The dough was VERY dry, almost like there wasn't enough liquid in it. So I took the dough from the other peanut butter cookie recipe and started adding it to this dough and I ended up with a pretty good consistancy. I still didn't like it as well as the regular NFSC recipe, but it worked for what I needed. My DS tasted one of the extras and I asked him if it tasted like a peanut butter cookie, and it did. So, I guess it worked out.
Thanks to all you guys for you help and suggestions!!! What would I do with my CC friends?!?!?!!?
Yes, they did!!! Just like the regular NFSC recipe! It was just a little harder to work with. But they turned out great. Although, I didn't take pictures of them b/c I wasn't really happy with my decorating of them!
When using the peanut butter 'fondant', can you still stack your cookies? Can you package them in plasitc bags?
Great! Thanks NeeNee, looks like I found my peanut butter NFs!! YAY!!! I'm so excited to try them!
