Need Help Coming Up With Filling Combo

I am new at coming up with these cake/filling combos. I was asked to make a small sheet cake for a wedding and they want some "special". They reference layered strawberries and cream as a filling that they had some place else, but they are open to new ideas. It is going to be very warm where they are going to have the cake and I am concerned about refrigeration issues. They want something a little different and I need something pretty basic without the refrigeration. Any suggestions? Like I said they are open to ideas.

I looked in the recipe forum and didn't see anything that would fit this.

How about a layer of passion fruit puree and a layer of vanilla cream or passion fruit puree and chocolate mousse?

I ended up telling her that I would come up with something "special". I would love the recipes for the passion fruit puree and the berry cream filling. They are mouthwatering.

For the passion fruit filling simply mix 50% passion fruit puree (such as Goya brand) with 50% whipping cream that has been stiffly whipped. Add icing sugar to taste.Enjoy.

ohhhhh, that sounds so good. We have had the Goya puree for smoothies and it comes in the frozen section. Is this the kind that you are speaking about?

I have a really good strawberries and cream filling that I use, but it has cream cheese in it, so it would need to be refrigerated. If you decide to go with the strawberry and cream theme and you want the recipe, just PM me.

2 cups heavy cream whipped stiff mixed with 1/4 cup strawberry jam and sifted powdered sugar to taste (about 4T) would be really good with sliced fresh strawberries... BUT, I also was worried about weather and instead of a mousse chose a buttercream instead for a wedding cake this weekend. Let us know what you decided! <<<<<Cheryl

1 (8-ounce) package cream cheese, at room temperature
1 (12 ounce) can condensed milk
1/3 cup lemon juice
2 teaspoons almond liqueur, or 1/2 teaspoon almond extract
2 1/2 cups sliced fresh strawberries
1 cup heavy cream

In a large mixing bowl using an electric mixer, beat the cream cheese until light and fluffy. Add the condensed milk and beat until thoroughly combined. Stir in lemon juice and 2 teaspoons of the liqueur. Gently fold in the strawberries.

You need to saran wrap the cake and let it set up at least 8 hours, overnight is better.
