When people ask you for a chocolate cream filling what do you guys do? I don't want to use whipcream, but I need something that's creamy. Any recipes shared would be appreciated.

I use a ganache or an instant pudding. For the instant pudding, instead of milk, I use heavy cream. The result is creamier and thicker.
