Can extra royal icing be frozen and re-whipped after thawing??
I would hate to have to throw away the whole batch when I only
need a bit here and there. Thanks all!

Yes, you can freeze it. I only freeze it if it is white though. Sometimes if you freeze colored royal icing it looks a little funky when it thaws out.

You don't have to freeze it. I put mine in the refrigerator but you can leave it out. I just hand mix it when I'm ready to use it again and it's perfect. Just did that yesterday.

I do the same thing as fairytale and it works just the same.

I leave mine out also, but sometimes it tends to loose its original stiffness. Just add a little bit of meringue powder to it and mix it up and it returns to its normal state.

PS. RI that is made with meringue powder can stay out, but if you have made your RI with egg whites it can not.
