Poke Cake - Taste?

I want to make a mermaid cake for my twins' third b-day and I am obsessed with the theme so I want the inside icon_eek.gif of the cake to look mermaidy too! I was thinking of making a white cake and then doing the poke thing with blue jello so it would kind of look like waves. How do poke cakes taste??? I have never had one - are they good? Can they stand up to being stacked and decorated??? Thanks!

Hmm.... I really don't know about poke cakes...

But wanted to offer another idea... what if you colored some of the cake batter blue, and marbled it before baking?? That would look pretty neat too..

Poke cakes are really moist and delicious. I have never tried to stack one, though. If you do it, let me know if iy works!

I've only just made a 2-layer 9" round poke cake, but never stacked. I think they taste good, but more importantly the kids LOVE them. You get a really vibrant color and the fruity jello flavor is intense. When I've made them, I decorate them with whipped cream icing - I think buttercream would be a mismatch (at least for my taste). They are moist and dense - not sure how well stacking would work, but you definitely need to keep it cold.

I have made them and they are moist and good. Kids do love them. I think icing with a complimentary flavor to the flavor of the jello would be fine.... Perhaps some fruit extract....

My mother-in-law used to make this cake for many years. It was very moist and she frosted it with whipped cream frosting and kept it in the fridge to keep cold. Kid's love this! You can use any flavor jello with whatever theme you choose to decorate with. I think the blue jello would be good!

The inside of a poke cake is so moist from the jello, I don't think it would stack very well, but I love them. When I make them I just put it in a 9 x 13 pan that has a lid on it and cover it with cool whip. That sounds good right about now...

Thanks for all the help!! I am really tempted to try it, although I am no fan of whipped cream icings - I am a buttercream gal and I want to decorate it, so I am not sure what to do. I like the idea of marbling the white and blue - maybe some colored chocolate chips would give it some extra flavor and make it look like fishies!! Thanks!
