I was reading the recipe for the Apricot Glaze as a crumb coat. Is there any reason you couldn't use another flavor preserves, like Strawberry?

I am making a chocolate cake with either a whipped chocolate ganache or a strawberry whipped cream filling. I am not a big fan of apricots, and I think a strawberry glaze would taste better.

Can I do that????

There is no reason why you could not use Strawberry if you so choose...
