Mmf Question

Hi. I'm new to all of this, so please bear with me. I am making a cake on Friday, and was wondering if the MMF can be made and stored tonight, or would it be better to make it tomorrow. I have a lot going on tomorrow night so was hoping I could get that out of the way today.

It is no problem to make MMF ahead of time! Last night I used some MMF that I made about 2 months ago! The only trick is to microwave it for 5-10 seconds and knead it with Crisco on your hands. It will be perfect! I make mine into a big ball, and wrap it several times with saran wrap to be sure that no air leaks in. Although, it's not the end of the world if it hardens.. you can just microwave it.

Keep in mind that when you first make it, MMF needs to sit for at least 45min-1hr for the marshmallows to cool. I think that would be way too much to do all in one day icon_smile.gif

Even if your cake is not due 'til January, it is still very OK to do your MMF today.
MMF does not go bad. You can do it way ahead of time.
I only do MMF, and that's one thing I like about it . Time is never an issue. icon_smile.gif

Absolutely!!! You can make MMF weeks, even a couple of months ahead of time; you just have to make sure to store it properly. After you have made your fondant, give it a good coating of Crisco and then triple wrap it in plastic wrap and then if you have them, put it in a plastic baggie and keep it placed in a cool area. This helps too in sort of "solidifying" the MMF, sometimes if it is too soft, leaving it stored for a but also helps make it more workable. Hope this helps. (Just as an FYI and to make you feel more secure, I made different colored MMF in the beginning of September, stored it and whenever i need the appropriate amount, i just take what i need and keep the rest stored and I have tasted it before usingn and it is great.)

I can never ever get my MMF to work properly more than a day or two past its birth!! It always get crumbly no matter how mamny times I puul it and knead it . Any pointers?
