I am taking wilton course 2 and I have to make the royal icing and the color flow. I am wondering if I am suspose to put it in the fridge after I am done making it until I go to class or not, also I am driving about an hour to my class how should I store it on the way up. Any other tips about these icings would be great too. Thanks a bunch.

You don't need to put these in the fridge. Store in an airtight container (I usually place plastic wrap directly over the icing before putting on the top of the container). Make this icing as close to the time you need it. If you make it to far in advance you may need to re-whip it (but stirring will usually do the trick). Have fun with it!!
