this is one of my all time favorites to make at christmas.. simple, but good!!!
PEANUT BUTTER MARSHMALLOW SQUARES
1 1/3 sticks butter
1 c. brown sugar
2 eggs, well beaten
2 2/3 c. crushed graham crackers
2/3 c. coconut
1/2 c. walnuts
1/2 c. peanut butter
2/3 pkg. sm. marshmallows
Cook in double boiler the butter, sugar and eggs for 30 minutes. Let cool a little, then add remaining ingredients leaving the marshmallows until last. Flatten in 8x12 inch pan. Refrigerate until firm, then cut into squares.

Gingerbread Recipe
This is a great, classic gingerbread recipe. It has minimum ingredients and does not require any cooking on the stove as many gingerbread recipes do. For a softer cookie (not ideal for molding or assembling), 3/4 teaspoon of baking soda may be added.
1/4 cup butter
1/2 cup brown sugar
1/2 cup molasses
2 1/2 to 3 cups flour sifted
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1/3 cup water
Blend butter and brown sugar until creamy. Beat in the molasses Add 1 cup flour, cinnamon, ginger and nutmeg and blend. Add the remaining flour alternately with 1/3 cup water. It may be necessary to knead the last cup of flour by hand as the dough will be very stiff. Form the dough into a ball and cover with platic wrap. Let set for 20 minutes before rolling. Preheat oven to 350°. Bake for 8 to 10 minutes or until golden brown.
Creme de Menthe Bars (always a big hit around Christmas!)
First Layer:
Melt: 1/2 c butter, 4 T cocoa, 1/2 c powdered sugar.
Add to above, sometimes with a little water: 1 egg, slightly beaten, 2 C graham crackers, 1 c finely chopped nuts.
Press into 9x13 greased pan, refrigerate for one hour
Second layer:
Melt 3/4 c butter. Add 4 T creme de menthe, 3 C powdered sugar, 4 T instant vanilla pudding.
Beat and spread over the first layer. Refrigerate until set.
Third Layer:
Melt 1/2 c btter and 2 C chocolate chips.
Spread on top and refrigerate for 20 minutes.
Cut into small bars. Care should be sed not to touch the chocolate top when cutting to avoid fingerprints. I keep these in the fridge, but they're fine out of the fridge for a while.
