What Size Pans Should I Use?

I have an order for a wedding cake for 275 people. She expects less will actually show...and food will be served etc. however, my dilemma is,...do I plan on 2" or 4" between cake pan sizes? It's going to be a stacked cake. What is the norm? Can someone send me to a pic. of theirs with 4" and 2" so I can see the difference?

There is no norm about the spacing. It is pretty much personal preference, and also what will work better with the design of the cake. If you have a lot of flowers or other decorations to go around the edge of each tier then you will want more room so then you would want a 4" difference. If you want it to look taller then I suggest only the 2" difference.

What design are you planning for the cake? Also what shape of cakes?

Its round cakes, Not many flowers, just a few fresh will be placed at site.
She wants it fondant covered MMf. Champage in color, with white royal writings on the sides on two of the tiers, and scrolls or something like that that looks good on the alternating tiers.
She likes the words written on them though. (Just great, I suck at writing....) oh well, here goes! icon_rolleyes.gif

Thanks indebi! Thats exactly what I was looking for! I'm going with the black & white one's sizes. That is the look I was looking for.
Now, wish me luck on doing the scroll type writing on the sides.... icon_cry.gif
I hate my icing writing. Don't have to do it until end of Sept. tho....so time to practice.
