Grainy Buttercream

I made PS buttercream for a birthday cake this weekend and it came out really grainy and not smooth. What did I do wrong? I used a recipe with butter and shortening as well as heavy cream. Any suggestions for next time? Thanks!

I'm not positive but maybe the brands that you used?? Did you cream the butter and shortening first and then add the rest of the ingredients??

definately cream first and I add my liquids (warm)to the butter/shortenting and let that run for a bit till the liquids are incorporated into the fat. Add p.s. gradually, allowing it to incorporate fully before each addition. After all p.s. is in, let the mixer run for AT LEAST 3 minutes, perhaps even 5-8 minutes depending on your recipe. If that doesn't help...I got nothin'. Oh! if you add salt to your recipe be sure to dissolve the salt in your liquids. Ok..now I'm out of ideas. Hope this helps!

I know this sounds like a stupid question but did you use powdered sugar? I know I sometimes get a grainy result when making like a ding dong filling or other filling that calls for regualr sugar.

I creamed the butter and shortening then added the sugar, then the liquid. That's how I normally do it and I've never had this problem before. I let it beat for a long time too. Maybe too long? I don't know but I really need to find a good recipe/technique.

Hmm...maybe charlieinMO is right. If this is the first time you've had this problem...did you switch brands? I've heard people complain about domino sugar.

It sure was Domino sugar. That's the only brand Sam's sells in bulk that I could get.
