Ok I Confess - I Cried Like A Baby!

Never again will I ignore my gut - My latest customer wanted white chocolate mud cake with white chocolate frosting. I made them one once before and liked it. They also wanted a topsy turvy cake. I thought 'uh oh... the white chocolate mud cake is heavy and crumbly, and the frosting is quite soft...and I've never done a topsy turvy before...' but of course I said 'yeah no problem!!"
The cakes baked fine. They carved fine. The problem started when I made the frosting and it wouldn't thicken. I used a whole bag of icing sugar and by this time it didn't taste so much like chocolate any more! But I had run out of icing sugar so I thought I'd better get started. Well I didn't think about the fact that this is clearly a non crusting buttercream, and I was planning to fondant over it. So of course it wouldn't stick and was sliding all over the place. It was bulging and tearing. Then I tried to stack it, and forgot the wedge shape that was going to hold up the middle tier.
By this stage I was a bit of a wreck. And yes, I did cry. I didn't blubber but I cried. My DH, bless him, said 'it will work out, you can do this' and sat with me at the breakfast bar while I tried to recover. So in the end I stuck lots of shapes and flowers, and beads all over it. I nearly forgot to dowel it too. I was so grateful he was there to talk me through it. I am a very lucky lady that he has more faith in me than I have in myself.
I drew this cake first for the customer and then a friend asked if I can make a four tiered one like it for his wedding. So just as well I got a chance to practice! Oh and a lady from work saw the drawing, said 'oh you can't do that!' and now I have photos to prove I can, so there!
I just had to post this, I always read the 'distaster stories' and think this will never happen to me but now it has so I can relax in the knowledge I have joined the ranks. The pic is in my photos. I have never quite worked out how to resize so I can link them in a post.

that lady that doubted you. She obviouslt doesnt know what your capable off... The cake still turned out Great! Im so scared to do a tipsy toppsy cake. IT looks like it would be desaster if i tried it!

The cake is beautiful! You should be proud. I think most of us has that one cake that did us in. I had to do a tire for a grooms cake and I cried several times but he absolutely loved it when he saw it.
We are always our worst critics. You are very talented! I can't wait to see your next cake. Keep up the great work.
