when I make a cake to carve....
1) Bake cake
2) let cool completely on cooling rack
3) Wrap in plastic wrap completely
4) Freeze
5) Take out of freezer and let sit for about 10-15 mins
6) Stack partially frozen cakes
7) Carve cakes
icon_cool.gif Seperate layers (if there are layers) and fill between with BC or filling
9) Crumb coat
10) Chill in fridge for about 30 mins to firm cake back up
11) Ice cake
12) Decorate

HTH.... sorry for long list, I am getting tierd and list is easier than typing it all out.
