Why Cant I Get It??

so.... i did this really cool cake on the weekend (which reminds me... i should post pictures) but anyway... i have tried over and over of perfecting the icing, i like whipped cream, but the kind that they use in the bakery shop because its more stiff, and stable. i CANNOT..... I MEAN.... CANNOT find a receipe like it. i tried one that had shorting, whipped cream, sugar, and flavoring, and it came out.... like of like pudding, i couldnt work with it. CAN SOMEONE PLEASE HELP ME..... PLEASE I AM BEGGING. oh yeah, and then my bf, told me i should stop baking cause i stress out about icing too much. i'm 22 and i'm getting gray hair. icon_cry.gif

Try Italian Meringue Buttercream (IMBC). It's a little more difficult to make but once you master it you'll love it. It has a light texture, and light flavor. I do substitue some High ratio shortening in mine since I don't like the "all butter" flavor. It's also more stable than whipped frostings.

I believe you can buy it ready-made to use in decorating . . . I think it is called Rich's Bettercream. There is another brand, too, but I can't remember what it is called.

look for whipped cream buttercream in the recipe section. its kind of like the bakery frosting and very very good. most of my cakes are done with this frosting.

There is a whipped cream recipe that uses cream cheese in the recipe section that is VERY yummy and you can pipe with it. Whipping cream can be kind of tempramental, I have found having everything very cold helps.
About 5-10 minutes before you start whipping place your beatters or whip attachment for a kitchen aid in the freezer. Make sure your bowl and whipping cream is VERY cold (I often place both of these in the freezer for a few minutes also.

THANK YOU ALL FOR YOUR SUGGESTIONS, I WILL TRY TO LOOK UP THE ITALIAN MERINGUE FROSTING. THE ONLY ONE I HAVE FAILED TO TRY IS THE WHIPPED CREAM THAT HAS GELATIN, AND WHIPPED CREAM. THANK YOU ALL AGAIN.
