If you ever have to ice a cake in a color the best way I found was to make what I call a "base". You take a small amount of icing, maybe 1/2 cup and make it very dark the color you need and then measure your icing and the amout of "base" you need so the icing comes out the same color every time without guessing how much to make at one time. This way you can control how much colored icing you need to make.
