I am getting ready to ice a cake using cream cheese icing (scratch). Will this have to be refrigerated after I'm through icing? It is for a party around 4:00 this afternoon. It is now 8:30am. icon_cool.gif

Yes, it will have to be refrigerated. You'll see what happens to the icing once you start working with it. As soon as it hits room temp, it gets pretty soft.

I have a cream cheese icing recipe that actually can sit out, but in this summer heat, I wouldn't chance it.

I use the crusting cream cheese icing and as long as the air conditioning is on I don't have problems with it sitting out for a few hours.
