Need Help Fast!! Making First Cake To Sell

Hi ladies, my name is Stephanie and I'm from St.Louis, Missouri. I am very new to cake decorating and slowly learning. I just completed the first Wilton cake decorating course and have an order already from my neighbor. She wants me to make a cake for her son's basketball team banquet. I'm pretty sure I can do it but I'm having the jitters because I'm not sure if the cake will taste ok and my decorating skills I'm still learning. My neighbor thinks I do a good job but I think I'm really too hard on myself. Do you guys use basic box cake mixes and enhance the mixes with favorings and puddings or do you use tried and true family recipes? I don't know where to start and I have 3 weeks until it's due. She wants to pay me as well so I have to make a damn good impression. I have always wanted to bake and sell and now I have the opportunity so ladies please,any information is good information. Wipes sweat off forehead...lol!! Thankyou!
When I am doing a cake that requires stacking or scuplting I use the Durable/3D cake recipe from this site in either Yellow Cake with vanilla pudding or White Cake with white chocolate pudding (I definite crowd pleaser).
When I am doing a normal cake - I use the following:
1 cake mix (don't use Pillsbury have had problems but Duncan Hines and Betty Crocker are okay)
1 cup oil
1 cup milk
4 eggs
1 sm pkg of instant pudding
Bake at 325 until done.
This gives a great moist cake! I do only buttercreams and don't work with fondant and use various buttercreams from this site (the Whipped Cream Buttercream recipe is my most requested and I use the Crusting (VIVA) Buttercream when I do something that needs to have detail put on it)....Good luck!
P.S. My most requested filling is my cheesecake filling which is the Dream Whip Mousse recipe found on the Dream Whip box with cheesecake pudding. Yummy with the white chocolate cake above!
WELCOME!!! I am from Union MO. I have always used cake mix from Duncan Hines and just doctor it or put fillings in it. My favorite cake so far is the pumpkin cake with cream cheese or the vanilla cake with cookie cream filling and the choc chip cake with choc. caramel fudge..... See I could go on and on. I am still new to this too and love learning from the ladies on here. I am so thankful for everyone her because they are so helpful. THe recipes on here are really good too. Whenever you have time you should try your hand at marshmallow fondant. It is easy to make and fun to use. Makes a cake look great! SO just play around with cake mixes and come up with one that you will like. I am sure you will find more than one!

You will do fine! I recommend using cake mixes on your first, and I also highly recommend using a simple syrup on it after its cooled, then wrapping it WELL in plastic, and freezing it. That will make it much easier to ice. AND the simple syrup will ensure that it is moist! You can just use 50/50 sugar and water, (1cup of each) boil it, cool it, then dab it on with a pastry brush. My cakes are so moist by using this technique. ![]()
You can also flavor this syrup to coordinate with your filling if you want, but if you're not sure what thats going to be, then just do the plain.
