I get more than 2 dozen cupcakes from one batter of the buttermilk devil's food cake recipe and exactly two dozen from a non chocolate cake recipe.

Why is that? Has anyone had this dilema before? It's not a problem that I have more cupcakes than anticipated but I was just curious.

Every cake mix is different. The volume of batter varies. The consistency of the batter varies as well. Some boxes yield 5 cups of batter and some 6.........does that address the question?

CakeDiva, the buttermilk devil's food cake recipe is in the Cake Mix doctor book. It is a delicious recipe. I get RAVE reviews every single time I make it. If you want the recipe, I can pm it to you.

I love almost everyone of the cake recipes in that book...they have a cupcake doctor also..check that one out!

I'm thinking it is the way buttermilk acts as a levening agent - makes the batter expand. Make sense?

I read a lot of things about doctoring cake mixes I just assumed you where all smarter and better bakers than I am (oh you all probably are as I am new). What is the exact name of the book and where can I find it.
Also is there any book out there that has fillings my family is tired of pudding filling. Thanks
