My daughter's school is having a family night and will have a cake walk. I would like to take in some cakes. There are 3, I would like to make. It will be hard for me to do 3 cakes at once. I have toddlers in the house. Could I just do all baking and icing one day and put the cakes in the freezer? Then take one out at a time and decorate them? Could I put them back in my deep freezer or keep them in the fridge. How long can a cake stay onthe counter until I have to take them to the school?
The cake walk is next weekend. I plan to start the baking next weekend while hubby ishome to help watch the toddlers.

With my work schedule and 2 very active teenagers, if I have a cake due on the weekend, I bake on Tuesday or Wednesday and wrap the cakes in saran wrap and leave on the counter and they are just as fresh as if I baked them that day and then I usually decorate on Thursday or Friday. It just depends on my time. I have never had any problems or complaints.

I usually bake and make my icings a week before. Cake goes in the freezer (wrap it well in plastic wrap) and icing goes in the fridge. MMF can stay in the pantry.
As far as leaving a cake on the counter, that depends on your icing and fillings. If the filling needs to be refrigerated, then you have no choice.
Cakes covered in fondant can stay outside as they are for like 2 days, and still taste good. If you cover with a butter-based icing, I wouldn't leave out for more than a day, at least here, the butter would melt. If the icing is shortening-based, you could keep them out overnight easily under a cake dome.
