I frequently check Craigslist for odd jobs to pick up some extra cash. Yesterday I saw a posting for someone who had lost their baker three weeks before their October 21st wedding.

So I emailed her. And now she wants to meet to discuss cakes. AAAGGHH!!!!

I have never made a wedding cake! What am I thinking???? icon_eek.gif

Well, I am thinking that I have made stacked cakes. I make yummy cakes (if I don't say so myself icon_wink.gif ) and thank God, she doesn't want fondant.

Looks simple enough. For a wedding cake anyway. And she said she wants "nothing to do with the hiddeous bow on top"! icon_lol.gif I just emailed her back to set up a time to meet. I also asked for clarification on the number of tiers. She said she only needs 100 and by my estimation that cake has waaaaaay more than 100 servings. I am hoping she doesn't want to do the square tier. I don't have a square pan. And frosting sharp edges concerns me.

So, have I lost my ever lovin mind?

I think you can do this. The design is very simple. Take a deep breath, we all have to start somewhere. I did my first wedding cake recently and was very upfront with the girl that I made it for.

The best advise I can give is not to panic. Just relax and do your best. Make a timetable for baking and decorating and be sure to take an
emergency kit with extra icing when you go to set up. I wish you luck and hope you will get the job!!

you can totally do that cake!

Maybe you can talk her out of that square tier to eliminate the extra servings that she doesn't need?

Unless that's what she likes about it ... but it might be worth it to get the square pan and practice ahead of time - you'll learn a new trick and have the pan and skills to offer someone else in the future too. Good luck!

KlyKat, www.craigslist.org is kind of like a giant classified section on the web. There's listings for jobs, cars, people selling things, etc. and lots more too.

HECK NO! You haven't lost your mind! You can do that cake, no problem! You have to keep challenging yourself if you want to grow/improve! Go for it!

So I am meeting with the bride and her mom on Friday afternoon! We are going to go over the specifics (flavor, filling, number of tiers, design elements, etc) and fill out the contract. And thank goodness, her reception site is only 15 minutes from my house. She actually lives over an hour away and I was more than a little concerned about transporting a cake that big, that far.

I'll let you all know how the meeting goes on Friday. Thanks for all your support and encouragement. I am really excited and slightly terrified about the whole thing. icon_lol.gif
