Can it be that you are not filling your liners up enough? I hate flat cup cakes myself, so I find that I have to put a little more batter to make them peak.

If you fill your cupcake papers half full you will get a flat, around the top of the paper cupcake. If you fill them 2/3rd full you should get a bit of a dome on them.

I fill each of my liners with exactly 1/4 cup of batter, each cupcake has the perfect dome and they are all the same size. Its a little time consuming but the results are worth it.

Thankyou ladies for your input. What I have been using is an icecream scoop to measure out the batter and since I've added a little more, the cupcakes look alot better! Thanks again! --satin
