Need Idea Of Pricing And # Of Servings For Sheet Cakes!

I am starting to be asked to do some sheet cakes and I have never made them before. Could a few of you throw out an idea of pricing and number of servings for a 9x13 double and single layer and 1/2 sheet cake?

I see that wilton chart says a 1/4 sheet 2 layers would feed 45...seems like a lot to me...plus I am going on a price of $2 a serving for round cakes and 90 for a 1/4 sheet cake seems like an awful lot! Do you generally charge less for sheet cakes??

i priced mine according to what other bakeries charge around where i live. i do $30 for a double layer 9x13, i charge $40 for an 11x15 double layer and $50 for 12x18 double layer. (i don't do single layers) -- and i charge extra for FBCT or gumpaste/fondant work. good luck!


oops-- forgot to say that for me, i say 9x13 serves about 20, 11x15 serves 20-30 and 12x18 serves 40-50...but there are lots of serving charts out there floating around. i think wilton's are a little too small too.

Where on this chart does it have sheet cake sizes.
I dont see them. I must be over looking it.

I have my price guide on my web page and it lists serving sizes. But I am told I am on the low side. However, my prices are decieving. This is just my basic cake, I charge extra for fondat, etc... and that is at the bottom of the price guide. Feel free to take a peek if that helps...

Determining sheet cake servings is just a matter of "do the math":

11x15: 2" x 2" would be cutting the cake in rows of about 5x7 (11 divided by 2 = approx. 5; 15 divided by 2 = approx 7) = 35 servings. 2" x 3" would be cutting the cake in rows of 5 x 5 = 25 servings.

If you do a 2-layer, you'd probably cut them in 1" x 3" which I would guess to be (approx) 10x5 = 50 servings

Same with the 12x18: 2" x 2" servings = 6 x 9 rows = 72 servings. 2" x 3" would be 6x6 rows = 36 servings. 3" x 3" pieces = 4x6 rows = 24 servings.
