BAKE YOUR CAKES.......

i feel sure this has been asked, but anyhoo......

if you are baking & NOT FREEZING, when do you bake...

do you refrigerate your un-iced cakes...

if you are freezing, when do you bake...

I like to bake the day before the cake is going to be served. I feel like my cakes are more moist the second day and the flavors have had time to develop.

Of course, this isn't always possible. I have been home this summer ( I work at school) so I have time on my hands. When I go back to school, I don't have that luxury with two children in school.

I don't freeze or refrigerate my cakes.

Just finished baking for a Saturday wedding. Crumb coated and now all covered and tucked away to settle overnight. (on the dining room table) Will decorate tomorrow and deliver on Saturday morning. I don't have room in my refrigerator for cakes icon_cry.gif

I also bake Thursday and crumb coat, decorate Friday to deliver Saturday. If I do in advance to freeze which isn't very often it's never longer than two weeks in the freezer, but I don't like freezing long. That's just me though.

thanks everyone, i have a cake due saturday, i would like to have baked it tonight, but i wasn't sure...i'm so tired now, i think it will have to wait until tomorrow
