Ok... so next month I am doing a couple of wedding cakes and I have a couple of questions for each one:

Chocolate Carrot cake:
The bride wants to have a chocolate frosting to go under the fondant. The fondant is going to be ivory with some detailing in brown icing.
1) I would love to know a chocolate icing recipe that would be great with a chocolate carrot cake, work well under fondant, and work to put some scroll work on the fondant.
2) Is there any way to make the fondant more ivory then by just using regular vanilla?

Carrot Cake:
The bride wants to have the cake covered in ivory fondant and she would like to have a cream cheese icing under it. My worries are:
1) How long can the cream cheese icing stand out at room temperature before it goes bad?
2) Can I refrigerate the cake if there is no detailing on the fondant and it has no added color?
3) If it will not be able to use cream cheese icing, is there another recipe that will work well with carrot cake?

I can't help with a lot of your questions, as I have never heard of chocolate carrot cake and I also have never used cream cheese icing under fondant.

However, I do often use ivory fondant. I just add a tiny bit of Ivory Americolor to my fondant.

Many posters have said that they put fondant-covered cakes in the fridge with no problems.

The only chocolate icing I use anymore is the Chocolate Syrup Frosting on this site and it is divine; however, I don't know how it would be with carrot cake.

Chocolate carrot cake -
Could you add cocoa powder to the cream cheese frosting that you are using on the regular carrot cake? And to make the fondant more ivory you can use ivory food coloring or the smallest amount of brown food coloring.

I would think that you would have problems with the chocolate icing showing through the ivory fondant.

hey chen, in the recipes section there is one i posted for a decorator's cream cheese and it is amazing. it doesn't have to be refrigerated and it can be used to decorate w/, it forms a nice crust on the outside while being moist underneath. i sometimes add some melted chocolate to it to make a chocolate cream cheese frosting. good luck on your weddings next month.

How intricate is the piping detail? I have used it for some simple stringwork, borders, etc., but never anything terribly detailed. Everytime I have used it it has piped well and I could eat it with a spoon it is so yummy!!!

If you look at the blue cake in my photos... that is the type of piping... I did that with RI... will it work for that?
