Terrific cake!
Preheat oven to 350°. Prepare pans
In bowl of electric mixer, beat on high until light and fluffy:
8 oz unsalted butter, softened
1 1/2 cups brown sugar
1/2 cup granulated sugar
Add 3 large eggs and beat well.
Add 2 cups mashed banana - mixture may look curdled at this point
Sift together
3 cups cake flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
Mix dry ingredients into butter/egg mixture just until combined.
Yield 8 cups batter
