I am doing a cake for a wedding and it has to be set up at noon but the wedding isnt until 6pm and then on top of that I will have to make the cakes a couple days before...

My question is, is how long is it safe to leave a cake out of refridgeration?? the receipe I am using for 2 flavors is made without any milk, but it has eggs... Then one of the flavors uses sour cream in the mix... the frosting is the crisco only so no dairy here..

This is my first wedding cake so I dont want to make people sick by my fridge is only so big.

TIA

A baked cake is fine out of the fridge, what you need to worry about is any perishable fillings/frostings.

You will be fine, I bake all my Sat wedding cakes on Thursday, and decorate on Friday.

I also bake thursday. Usually I can ice and deocrate on same-day, but if not, I will decorate friday.

you'll be fine.
