Has anyone ever used the cake extender recipe to make cupcakes? Approx how many cc's will it make, and how is the consistency of the cake?

I've done it before and it seems to work pretty good. I fill the cupcakes about 3/4 of the way full and I usually get about 24 cupcakes.

I haven't used it, but it is going to depend on the brand and flavor of cake mix you start with. I know people say they can use the extender recipes for the 13x9 pans and that would normally take me a cake mix and a half. So I'm thinking you'd get about 3 dozen cupcakes.

I get 24 cupcakes from a doctored (extra egg and pudding) cake mix.

Maybe a silly question, but what is a cake extender recipe? Something that makes the standard recipe go farther? Something you add to it? hmm... icon_smile.gif

One mix plus the extender recipe made exactly 36 cupcakes, using a 1/4 measuring cup to measure each cupcake.

It seems as if using the extender is the equivalent of using one and one half cake mixes.
