Another Wedding Cake Question

first thanks for everyone who helped me with my other question but i have one more with my wedding cake they put straws in it instead of dowels so is that a good idea?? or what and where do you buy wilton hidden pillars?thank you som uch everyone who has helped me and one more quick question would it be ok to bake the cakes 2 day in advace and freeze them then decorate the day of or what its a simple design but i just didnt know about the freezing part i worked at a bakery and they froze everything but i never ate any of there cakes so i dont know if it took the quaility away or not so thanks again????

I freeze all ofmy cakes. Even if it's just for a day. I find that it locks the moisture in and makes a moister cake when they are frozen.

Welcome to CakeCentral! I have a cake due on Saturday. I will bake on Thursday and make all my icing. I only stack layers and crumb coat. Letting the cakes settle overnight. Then on Friday, I will final coat and decorate. Saturday I will deliver. I like to leave wiggle room for any unexpected things. If you do freeze, I have read where you need to let them thaw completely before icing so you do not have condensation. There are many more experienced bakers on here and I hope they can help you. My schedule came about after reading EVERY post I could find on wedding cake timing icon_surprised.gificon_eek.gif Michaels or Hobby Lobby would be a good place to look for the pillars if you need them. I use the dowels.

I do freeze my cakes, but I also let them thaw compeltlty before icing. I bake on thursday, and thaw on fri night, decorate on sat. I do not level or torte before freezing. I would not reccommend using straws by them selves , to me they just don't seem strong enough, but I may be wrong as I have never tried it. I do know that some put their dowels inside straws so when the cake is being cut the dowels are easy to see. I just use regualr ol woden dowels as I live out in da woods and it is so much easier to just run down to the hardware store than drive and hour to the nearest cake store.
