I'm making a cake today for a friend's daughter's birthday party tomorrow. The cake is going to be too big to fit in my fridge. I will be frosting it with this buttercream frosting. If it can't sit out overnight, I'll have to frost and decorate it tomorrow morning before the party, so it's do-able, but it would be much easier if I could do it tonight (when my kids are in bed!) Here's the recipe:

One-Bowl Buttercream
INGREDIENTS:

* 6 tablespoons butter, softened
* 2 2/3 cups confectioners' sugar
* 1/2 cup unsweetened cocoa powder
* 1/3 cup milk
* 1 teaspoon vanilla extract

DIRECTIONS:

1. In medium bowl, beat butter. Add confectioners' sugar and cocoa alternately with milk, beating to spreading consistency (additional milk may be needed). Stir in vanilla.

I think it will be fine in a cool room overnight.
