i have a 12x18 sheet cake in the oven and i forgot to put the flower nail in the middle! aghhhhh... i'm worried that the middle will take a lot longer to complete cooking while the edges are going to be overcooked now. icon_sad.gif

any advice?

TIA

Cakerator:
I never heard about using the flower nail on this size cake until recently. I never used it for this size cake until then. I never had a problem. I did bake at 325 degrees. I use it now in hopes of the cake getting done sooner but usually forget about it. I know many that bake a lot of this size and never use the nail.

If you put a flower nail in the center, it helps cook the center? I'm new to cake decorating and just wanted to make sure I understood correctly.

I would turn my oven to 325 and just watch. I don't use the flower nail.
When your cake is done,(use the toothpick test) if it has a hump in the middle, lay a towel over then, place a cookie sheet and press down until it's level. works for me every time.

cakerator!! Quick!! Once the cake will hold the nail without sinking in, just grease the nail and stick it in the top of the cake point down. That way it will still conduct the heat and your cake will bake even.

thank you all for your help! i made it through icon_smile.gif

i had the cake on 325 and just kept watching and checking, and watching, and checking.... it came out okay i think.

its funny because before i heard about the flower nail trick, i had baked a cake this size once and it came out fine. but when i heard about the trick here on CC i've used it ever since. so, i panicked. LOL

it all worked out fine in the end. thanks again to all of you.
