Freeze Now Or Bake Later?

I have a 5 tier wedding cake on the 14th. It's out of town and I'll be going down there the Thursday before. I want to know if I should bake all of the cakes before Monday and freeze them, or should I start baking Tuesday or Wednesday and just leave them wrapped nice and good at room temp? Will they be stale that way? Or is it too late to freeze? Just trying to get the easiest way to do it...

My vote is to freeze them although everyone has a different opinion on this.
I just find it so much easier to bake in advance and freeze.
Lately I've followed the advise of others here and bake one day, make icing another and than when it's time to decorate it's all ready for me and I don't have to dig myself out of the bottom of the clutter to start decorating!

Do you bake one day, make icing the next, then frost the next and freeze in between? Or just leave them wrapped up until you frost?

I bake all of the layers one day wait until they are completely cooled and than wrap in saran and foil and stick in the freezer. The day before I want to decorate I make all of the icing. I usually take the cakes out and unwrap and let thaw on the day I decorate. I hope this helps!

I work full time so the only way I get to do cakes is to bake ahead of time and freeze. I get tons of compliments on my cakes, some scratch, some doctored mixes, always moist. If you have enough cake pans, I like to put the wrapped cakes back in the pans, then in freezer.

definitely freeze! its so much easier to plan, organize, pace yourself and not go crazy!

I'm taking 80 cupcakes to the school where I work at the end of this month. I've already started baking and freezing, otherwise there would be no way that I could do it.

I definitely bake and freeze ahead. I take my cakes out of the freezer about 3 hours before I need to torte -- I torte then let set for at least 1 hour to let the filling settle. Then I ice.

I bake usually the weekend before a cake is due (I have a full time other job!).

I make my icings the night before I decorate.

On multi tiers cakes that I cannot decorate in one night I will decorate half on the night two nights before and the other half the night before. I definitely keep in the fridge until delivery (but most of my fillings spoil if not refridgerated!)

Hi. Can I frost night before needed if I refrigerate? Or will something happen to the frosting?
