Emergency. It's Thursday....cake due on Saturday. My girlfriends daughter is getting married on Saturday. Long story short but in a moment of weakness I said I'd "DO" the cake.

The design has changed three times. I've started fondant flowers and bought impression mats and those have been tossed to the wayside on this one.

I thought we'd ironed everything out on Tuesday but low and behold.......

Today she phoned and says they are having 60 people. She told me 40 to 45 on Tuesday.

I planned on a 6" on top, 8" in the middle and 10" on the bottom. I also included a 9" Chocolate grooms cake. I felt I had enough cake for 50 with the wedding cake and about 20 more with the grooms cake.

She now wants me to "hold" the grooms cake for the groom's "birthday" on Sunday. So I've lost that capacity buffer.

I don't know if I have enough cake and frankly, I'm tired of baking.

Am I OK? Or do I need another cake?

a 6,8,10 double layer ...each layer 2" deep will serve 68! However on most wedding cakes the top tier isn't counted in order for the couple to save it for the first anniversary.

maybe you could just buy one of those little jiffy cake mixes and mix up a 4" cake for the couple .........then you would have more than enough with the rest.

First of all, you are quite a patient person.....Unfortunately, it sounds like they have no idea how it works and no way can they be changing stuff around like they have been. That said, it sounds like you will have enough cake for 'wedding' size servings...

I think it's crappy to accept the gift of the wedding cake and the grooms cake and then sub the groom's cake for his birthday....would have been much more classy to have ordered and paid for a seperate birthday cake for him. You are a gem!! 'Cuz I would have blown my stack a while ago icon_lol.gif

Put a firmer stance on your ground for future orders and lock in the order a month from event. If they are non-family paying customer, tack on additional charge for last-minute changes. Good luck, I'm sure it'll turn out fine.

Groom cake for the birthday? Hmmm, if they are family, if you feel like it, suggest to do the birthday cake separate and have the groom cake where it belongs. After all, each cake you make is another adventure, right?

Tell us how it went.

Thanks, ladies. I feel calmer now.

She's a good girlfriend but a little flakely. I love her so I won't blow my top but next time I offer a freebie....someone should shot me.

If I would have added a 12" (8, 10 and 12) I would have had tooooooo much cake. I'm not trying to be cheap but I have no value for baking cake that gets thrown away. I don't want to seem cheap but because of the size, I was just cutting it close and the extra 15 people messed me up.

If y'all feel I'm OK, I'll just bake a little cake for the B/G and leave things as they are. I'll cut the cake to assure I get the servings I need.
