Need Ideas For Coconut Cake Fillings...

I am making a cake for someone that wants coconut cake but has no clue as to what filling. Im making another cake and I have tons of cream cheese icing so I wanted to use some of that in this cake. I was thinking about maybe a raspberry and cream cheese filling. I made it and didnt like it. Anyone have any ideas. Even non cream cheese just a yummy idea that goes with coconut cake.

toasted coconut and pecan icing (homemade..the kind that goes great with german chocolate cake)

key lime curd (like key lime pie)

lemon curd

thickened mango puree

whipped milk chocolate ganache

I second the key lime curd - it is delicious. I've made this combo several times and everyone always raves about how yummy it is.

And while I've never tried it, coconut goes really well with chocolate, so that might work, too.

I used the raspberry mousse filling from this site with coconut cake and it was soooooo good!

I was just wondering myself if a sour cream-white chocolate filling would go with coconut cake. If you've ever had Lindt's White Chocolate-Coconut Bar. . .

Thanks for the Ideas! I think Im going to try some cream cheese & rasp. Also the cream cheese coconut sounds yummy too... If I dont like them then I'll elaberate depending on what taste good. Thanks Guys!

My dh wants a coconut cake and I'm going to make a filling with rum flavoring. We also talked about banana, chocolate or passionfruit puree. (It's for my hubby, he gets whatever he wants! icon_lol.gif )

I made a coconut cake with passion fruit mousse. I got the passion fruit mousse recipie from Martha stewart and I bough the Goya passion fruit in the freezer section ( I also made it with fresh passion fruit but it was so exspensive and it was better with the goys) Dh LOVED IT!

I like a banana filling with a little rum brushed or stpritzed on the cake before filling. mmmmmmmm goooooooooood
Pineapple is another favorite of mine.

hmmm... yummy!!

I would go for white or dark chocolate, passion fruit, mango, strawberry, or guava! Whenever i think of coconut, fruit always comes to mind a a great match!!

I ended up making a cream cheese coconut filling! I used the coco lopez cream of coco and some Bakers coconut flakes. It is so so so so Good! Yummers! and its on a white coconut cake. Its going to be good. i could have tried different flavors and I will when i have more time. Im interested in a no bake key lime filling. Yummy
