Mmf Pleae Help. (First Time)

I'm planning on decorating a cake for Saturday tomorrow. Should I make the MMF tomorrow just before decorating? Could I make it today? Does it gonna get hard? I haven't tried it before. It is gonna be my first time icon_cry.gif , even though I have worked with ready-to-use Wilton Fondant. I just want to do as much in advance as I can. I have heard that the MMF sometimes gets a little hard. Also I have seen a recipe with and without Crisco. Which one do you recomend me to try? or which one taste better?

i made mmf the day i was decorating, the one w/out crisco and it was fine, i also had some left over for about a week wrapped up and all i did was warm it up in the mic for a few secs at a time to get it plyable again. i used some almond extract to flavor mine and it tasted great! everybody loved it! but i did use crisco on my hands just a little while kneading it the first time.

I've only made it once, but I made it a day before I needed it, microwaved it for a few seconds before I rolled it out & it was very easy to work with. I did use crisco on my hands, countertop, and rolling pin.

Thanks. I jus want to know if you decorated the cake before the day you needed the cake for. Was it okay the day you cut it, or was it hard? I do have to decorate a 9in. round cake. How much do I have to make in order to have enough for the decorations?

I generally make it a day ahead and let it rest a little while. Then just nuke it for a few seconds and knead when ready to use it.

I *really* recommend the Crisco recipe ("Alternative MMF") over the original. Much more elasticity.

Hi ME2.. Thanks for you reply. I got one more question, was the Alternative MMF taste also better than the regula MMF? that is, does the Crisco only help with the elasticity, or the flavor as well?

This cake I am making is for sale and I want the fondant to have a really good taste as well, so you actually eat it!

I too prefer the alternative MMF recipe..... the taste is the same in my opinion, but adding the crisco makes it much easier to work with. The cake I did with it....decorated on Friday and delivered on Saturday morning...I asked if they had problems cutting it etc.....they said NO...it was great. Hope this helps. I also made the fondant on Thursday, let it sit out overnight (wrapped and in a container) then zapped it for about 30 seconds in the microwave before rolling it out.

FYI-mmf doesn't really go bad. It has the shelf life of marshmallows. Just seal it tightly in a ziplock and nuke it before you need to use it again. 5 seconds at a time.

I have used MMF and have made it ahead of time and warmed it in the microwave. I have also made the MMF and decorated the cake the day before the event, and it turned out fine.

I like rolling it out with cornstarch, though, and be generous. Don't roll it too thin or it may tear and stretch too much.

hI All,
Thanks so much for all your help. I made the MMF yesterday and I think it went well. I hope it will be ok for tonigth for covering the cake. icon_biggrin.gif . I just have another question. I was gonna make the cake all white, but I just change my mind and I'm gonna meke it all green. HOW I CAN COLOR THE MMF? If I apply the color do I have to add more sugar? Or I just add the color like regular Fondant?
Please help again!

It depends how much green you are adding. I needed to add cornstarch with the blue fondant I did because it was getting too sticky from the color. Also, it really helps if the fondant is a bit on the warm side. The color blends through with alot less effort.

I color my MMF in the melting marshmallow stage. I've added colored water and food color before with no issues (except dark red and blue! They suck!). I prefer it that way if I need a large batch of a particular color this way I don't have to knead it in.

I always use the regular recipe (haven't tried the 2nd) with the full amount of sugar. I usually have a little sugar on the bottom of the bowl that doesn't completely mix in, but I just toss that.

After it comes off the mixer, I grease my hands well and mix in the crumblies - the really crumbly stuff I mix together with wet criscoed hands and it comes together just fine.

I double wrap my MMF in saran and leave it out. I have scraps of just about every color imaginable. I've noticed the longer I have it, the harder the outside gets, so I just cut off the really hard stuff and work from the inside after nuking it. I've tried to use the extra hard outside and it just ends up lumpy so I say forget it!

I like to make my MMF the day before at least, but I made a batch this morning for today's cake cause I procrastinated LOL.
