I'm making a cake with 5 pennant flag which are going to mostly dark colors. The customer has asked that the cake be iced in chocolate. I don't think the flags will look as good with a chocolate background.

I need some ideas as to how to make this look ok. my mom has suggested i ice the sides in chocolate and the top with buttercream but i don't feel right doing that. I also thought of using white chocolate but i've never seen a recipe for white chocolate frosting nor am i big fan of white chocolate.

will you please help me? give me suggestions? this cake is for tomorrow night, so time is of the essence.

If the customer is specifically asking for chocolate, go with his/her request. Perhaps the flags can be made from plaques and vamped up that way?

I agree you should do as the customer asked- maybe you could outline the pennants in a light color to make them stand out?

I would contact the customer and give them your opinion. If they still want chocolate then definitely do what they asked for. I had one a month or so ago and they wanted chocolate after I thought about it and decided what I was going to do I called and told them that I didn't think it was going to look right on chocolate so they decided on bc. After they saw the cake they were pleased and glad they didn't do the chocolate.

Hope this helps.

maybe you could talk them into covering the cake in fondant??? Then you could ice in chocolate and they could pull the fondant off if they don't like it. If you are wanting to talk them into white chocolate.....all you do is add 6 oz. of melted and cooled white chocolate to your regular bc and that's it! Or what about putting a white fondant plaque behind each pennant then it would really pop off of the dark background! Or maybe if you filled iwth chocolate they wouldn't mind it being iced in regular. People who don't decorate are often more in tune with flavors than designs so you definitely should let them know if the flavor has to change for the purpose of the design.

Thank you all so much...great ideas! i don't know if i'd be able to convince her on the fondant idea. i practically cringed when she told me chocolate as i knew i would be worrying about this. I think I will outline the flags in white to make it pop against the dark background.

now my follow up question (because you knew there had to be one: ) )
dark chocolate icing or a light mocha color icing?

you guys are the best!

I would go darker- it just screams "chocolate!"- that way no complaints.
