Freezing Cake

Can you freeze a cake after it has already been decorated with fondant? If so how long? Will it make the cake wet after it thaws? THANKS!!!

You can freeze a cake covered in fondant but if you use dark colors you could have some bleeding during the thaw. The cake will have lots of condensation but it will dry and the cake should look just fine. You can also have a fan blowing on it while thawing to help.

As far as how long-not sure with fondant but my wedding cake was frozen for a year and tasted just as good as the day we got married. But it was wrapped and stored properly.
