Does anyone know what temp I would use to bake with this pan? It is the Wilton performance sheet cake pan.....11x15x2in icon_biggrin.gif

I have to bake mine at 300 degrees because my oven seems a little too hot. This way the cake bakes slowly and cooks throughout evenly. Otherwise, the outside gets done way earleir than the inside and I am left with a hard cake that's raw inside! I also bake with the bake even strips but you don't have to especially if you keep your oven low. Good luck!

I bake mine at 325-350 with 2 flower nails in it. But then I'm not patient enough to wait the 90 minutes it would take to bake at 300, nor do I want my oven on that long.

I would definitely use the bake-even strips along with the flower nails. I made an 11x15 the other day with a flower nail, but forgot the strips! I baked at 350 and it was BAD! Rebaked at 325 with strips and a flower nail and it turned out great!

I use that pan all the time...bake at 350 without any strips or nails and never have a problem. Probably just depends on your oven?!

I dont have any bake even strips, not sure I know what those are, lol. I used a flower nail and baked it at 300, just took it out and it looks good!

What are bake even strips, lol, I feel like a dork asken but, I think those may come in handy icon_lol.gif

Bake even strips can be purchased at Hobby Lobby or Michaels. They are strips of cloth with a silver lining on one side. You soak these strips in cold water, wrap them around your pan, pin in place and it helps your cake bake very evenly--not so much of a dome forms. I use them always, along with baking at 325 degrees, no flower nails or cores. I use the 11X15 pan all of the time and this method really helps!

Wilton sells them. You soak them in water, and pin them around your pan and bake your cake! It keeps the sides from getting done to quickly allowing the center to have time to bake evenly.
