I had my first cake tasting for a bride today. I was super nervous about the whole thing. She came w/ her mom and her fiance and they all asked some good questions that I was prepared for. They all raved over the cake (WASC cake made w/ French Vanilla mix, vanilla & caramel flavoring and Sarah's red velvet) and got special comments on the icing as well (buttercream dream made w/ Sweetex, vanilla, & creme bouquet).We went over all the details in my contract (thank you KellieM for your template!) and said if they'd like to hold the date they would need to put a $50 deposit down. They signed the contract and mom wrote a check and then she asked about me possibly making two diabetic cakes as well. I told her I would have to get back to her on a price for that and she said fine, just let her know what to write the check for. After they left I realize instead of just making the down payment she paid for the entire thing!! YAY! Um...so anyone know a good recipe for a diabetic cake and frosting?? ![]()

I have a few members of my family that are diabetics and I make a chocolate cake from splenda that is the bomb. I make a cream cheese cool whip icing with splenda. You will have to find a diabetic friendly icing but spleda has alot of recipes.

Buttercream dream is listed in the recipe section here. I used 1 cup of butter (have used both salted and unsalted), 1C of Sweetex (hi-ratio shortening), 2lb powdered sugar, 2tsp's of vanilla, and 1 tsp of creme bouquet, and 4-5 tbl water.
They asked about delivery and set-up (they thought they would have to set up the cake!
), how to downsize the cake they liked in the book, what the deposit covered, and why there was a refundabe deposit on the materials and how they would know what needed to come back (I include a list of all materials that need returned w/ the cutting guide). The bride was having a hard time seeing in her head what the cake she choose would like like w/ different seperators (pillars instead of the decorative wilton seperator) and I pulled out some of my pillars w/ my cake dummies and was able to show her what it was going to look like.
Congratulations Karla!! That is great that they paid up front and also seemed to be nice customers. I can't imagine why they would think they needed to setup the cake, but at least they asked to be sure!
Would you mind sharing your cutting guide? I've been looking for something to give out and haven't found anything yet.

The contract template I got from KellieM @ www.cakeboss.com. It's under their "cake stuff" on their site.
I use Wilton's guide to determine my price and that's the guide I had them for the cutting. I let them know the serving size according to the chart and if they want bigger pieces they can order more cake. ![]()
