Help With Mil Birthday Cake

My MIL bday is this saturday and my husband asks me as he is getting into to bed at midnight last night "You are making a cake for mom's bday right?" I mumble yes and try to go back to sleep. Well last time I heard we were not having a party, now we are. So any ideas would be helpful. She cannot eat chocolate it makes her get a rash on her face poor thing. She has been through a lot in the past months, my FIL passed away in July. I want to make something special, but are really drawing a blank here. icon_confused.gif TIA

Carrot Cake is always good, especially this time of year. No chocolate in that icon_smile.gif I have a very tasty moist carrot cake recipe if you'd like it.
As far as decorating it goes, what does she like? Does she have any interests that you could decorate a cake with?

A white cake with a fresh fruit filling. The filling is always a big hit, no one expects fresh strawberries, peaches, or raspberries in a cake. Keep the decorations simple and enjoy the party.

I would love the carrot cake recipe. She commented recently that it has been a long while since she had a good carrot cake. What type of icing do you use on it?




I use cream cheese frosting on it. Here's the recipe. I hope you like it icon_smile.gif

Carrot Cake

1 cup dark raisins
1 pound carrots (4 cups, firmly packed)
2 cups minus 2 tablespoons sifted all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 tablespoon unsweetened cocoa powder
4 eggs graded "large" or "extra-large"
2 teaspoons vanilla extract
1 cup sugar
1 cup dark brown sugar, firmly packed
1 1/4 cups corn oil
5 1/2 ounces (generous 1 1/2 cups) walnuts, cut into medium-small pieces


Preheat oven to 350 degrees. Prepare 2 8-inch cake pans.

Steam raisins by placing them in a vegetable steamer or a strainer over shallow water in a sauce pan. Cover the pan, place on high heat and let the water boil for about 10 minutes. Then uncover and set aside.

Grate carrots, measure and set aside.

Sift together the flour, baking powder, baking soda, salt, cinnamon and cocoa. Set aside.

In the large bowl of an electric mixer, beat the eggs to mix. Beat in the vanilla, both sugars and the oil. Then, on low speed, add the dry ingredients and mix only until incorporated. Stir in the carrots, the raisins and the nuts.

Divide among the prepared pans.

Bake for 35-40 minutes until the tops just spring back when gently pressed with a fingertip and the cakes begin to come away from the sides of the pans.

Maybe a white cake or a yellow cake with raspberry mousse filling and buttercream or fondant frosting.
