How Long Is Buttercream Good For?

I have somehow managed to get 4 cake orders for the weekend of Oct 27th
...So I am going to need a lot of icing, and I was wondering how long is it good for? How far in advance can I make it? Does it last longer if I refrigerate it? Also do I need to keep it white unitl time to use it or can I go ahead and add the colors to it?
Just tell me what to do..LOL

as far as i know, buttercream will keep for about 2 weeks in the refrigerator. and yes, the frige helps it keep longer.
you Can color the icing first but keep in mind that the colors will deepen as it sits. HTH
Our instructor gave us two weeks unrefrigerated, three months refrigerated...just rewhip before using...
oh..... and best not to color it until just before use.... if you want to do say a cup of green for leaves for example...make sure to keep it well sealed and stir it before every use.

I make only swiss merengue buttercream and I can store mine in the freezer for up to three months...its should be in an airtight freezer proof container and to use i defrost by leaving it out and then re whipping it in the KA. mmmmm mmmmm always taste as fresh as the first day.
