How Long Is Buttercream Good For?

I have somehow managed to get 4 cake orders for the weekend of Oct 27th icon_surprised.gif ...So I am going to need a lot of icing, and I was wondering how long is it good for? How far in advance can I make it? Does it last longer if I refrigerate it? Also do I need to keep it white unitl time to use it or can I go ahead and add the colors to it?

Just tell me what to do..LOL

I normally throw mine out after 2 weeks, but read a thread here recently that some people keep it refrigerated for months. So here's a bump....I'd like some details.

as far as i know, buttercream will keep for about 2 weeks in the refrigerator. and yes, the frige helps it keep longer.

you Can color the icing first but keep in mind that the colors will deepen as it sits. HTH

Our instructor gave us two weeks unrefrigerated, three months refrigerated...just rewhip before using...

oh..... and best not to color it until just before use.... if you want to do say a cup of green for leaves for example...make sure to keep it well sealed and stir it before every use.

Thanks a lot...that really helps me out because the same week I have all those cakes to do my DH has also asked me to make dinner for 23 members of the cross country team that he coaches!! icon_cry.gif

I am going to be dragging by the end of that week!!!

I make only swiss merengue buttercream and I can store mine in the freezer for up to three months...its should be in an airtight freezer proof container and to use i defrost by leaving it out and then re whipping it in the KA. mmmmm mmmmm always taste as fresh as the first day.
