I'm making a birthday cake for a co-worker on Thursday. I have a 9 inch round cake. The recipe I'm following calls for 2 2-inch layers. That seemed a little small so I made another batch. I now have 4 2-inch layers. And each layer isn't competely 2 inches. I'm thinking of using 3 of the layers. There will be froting in between each layer. Plus a truffle on top for each person. Will a 9-inch round cake, 3-layers with each layer about 2 inches give or take, serve 11 people?
I think it should be plenty. I bake 2 8x2" cakes and torte each one (so I have 4 layers approx 1"). After filling the cake it makes a rather tall and full cake. We have 13 people in our office and there is always cake left.
I'm not the brightest thing on 2 feet right now. I agonized over how high the cake box should be because I didn't know how high the cake would be. It never occured to me that 3 2-inch layers equals at least 6 inches. And of course my box is only 5 inches high.
I suppose I could cut and paste a few boxex to make a box high enough? Or cover the cake in wax paper? It'll be in my refirgerator until I leave and it's only a hour to work.
