How Far Ahead Is Too Far?

Hey guys -

My next cake will be a challenge because it's a surprise for my girlfriend - I'll be making it while she's out of town this coming weekend, but it isn't to be served until the following weekend! Is that too far ahead of time to finish a cake - will be chocolate cake with chocolate and crusting cream cheese frostings and fondant on the outside. (i think part of my sagging fondant from the last cake was the fact that I refrigerated it after covering it, in retrospect I seem to recall that's a bad idea, so I wouldn't do that this time.)

If that *is* too long, any ideas on how to distract somebody while you're making a cake for them would be great =0) Maybe she can stay at her mom's for a few days, heh.

I think that is a bit too far. Sorry I can't help with distraction ideas....good luck!

too far ahead, IMHO. If you want to bake and freeze the cake, then ice and doecorate later in the week that would work.

I think it is to far ahead. I would make and freeze the cake layers.

Make the buttercream icing and color anything you want colored. If you are making the fondant then go ahead and make that too.

What are you planning on putting on for the decorations? You might be able to get these done ahead of time to so all you have to do is decorate.

Sorry I can't help more but hey if you get all that done then most of your mess will be cleaned up and out of the way so she won't know.

My max time for baking a cake/decorating ahead is 1 day...I can always tell when a cake has been frozen - but if you want to distract your gf...maybe arrange for her and a close girlfriend to go get manicures/pedicures, etc.,

Thanks everybody - that's what I was afraid of, but kind of expected. It has taken me two days plus, to do each cake I have done thus far, so I'll try to do it as per usual, and just try to keep her away from the dining room/kitchen area...

I just noticed that you were using Crusting Cream Cheese icing. I think that will need to be refrigerated - but you made the comment about not refrigerating. I think the freezing idea may work better - maybe have your friend help you with the cake!

I thought somewhere I read that CCC didn't need to be refrigerated because of the sugar and fat content. I may be wrong.

Anyways, I will not do it a week ahead as suggested - I'll figure out something!
