What Flavor Cake For Apple Filling

Hello everybody,
I have to do a cake with an apple filling. I have never done a cake with this filling and was wondering if you could suggest what kind of cake will go with this filling?
Also. the cake need to be sturdy since I have to carve it. Should I go with box mix or scratch and if scratch what recipe will be best?

Sorry for so many qiestions....need clarity before I go ahead with this cake.

i'd suggest a good scratch recipe.

flavors...

amaretto
cinnamon
yellow
cheesecake (instead of cake?)
walnut
caramel
hazelnut
toated almond

here is a recipe by toba garrett that i use frequently. you can use this recipe as a base and alter the flavoring as needed. yum! follow the instructions to a t and you'll be so glad you did.

Dang, I'll have to get my mom's recipe so I can post it on here for snickerdoodle cake. (OMG fresh out of the oven with cold milk poured on it..........mmm mmm mmm).

I would suggest a spice cake or caramel cake. YUM!!! thumbs_up.gif

If you're interested in using a box cake mix, Duncan Hines makes a great spice mix and a really yummy caramel mix. You can doctor the mixes by adding an extra egg, using milk instead of water, and adding a box of instant pudding (caramel pudding for the caramel mix and vanilla pudding for the spice mix). In addition to above mentioned flavors, I would suggest a butter pound cake, or yellow cake using the enhanced recipe from CC (extra 1 cup of sugar & flour, 3 eggs, stick of butter, 1 c sour cream, 1 1/2 c water) to this enhanced recipe I would add a t. vanilla and a t. of cinnamon extract. I just found a bottle of cinnamon extract at the grocery yesterday, had not seen cinnamon extract before, I can think of a lot of uses for this. This enhanced recipe makes for a dense cake for carving. Good luck with your cake.

be careful about how much apple filling you put in the cake if you are carving. if its very thick or chunky, or saucy, there may be a stability issue as you carve ...depending on how detailed you are carving. just thought i'd throw that thought out...are you making the filling or buying it premade?

Thankyou for so many wonderful suggestions. Well..I never knew that DH makes caramel and spice mix???? I have never seen in at our grocery store!! Maybe I should try other stores over here icon_smile.gif

Well for apple filling.... I'm just altering the apple pie filling. Instead of chunks of apple. I'm first grating the apple and then mixing it with some sugar, cinnamom, netmeg and little cornstrach in a pan over med heat.

Wish me luck! This will be my first carving cake!

The caramel and spice mixes may be regional ... I have heard people say they can't find caramel in their area. I hope you're able to find them!

I was just reading through the Whimsical Bakehouse book and came across a recipe for Walnut Caramel Cake- I think it would be sooo yummy with apple filling! thumbs_up.gif

They also have a recipe for Spice cake.

Yes I have that Book....but I'M somehow never able to find "Cake flour" Can I by any chance alter it and use All purpose flour???

Here is a recipe that has been floating around for years, it is from Ladycakes forum. I have made it and it is quite good, moist, a bit heavier than a regular cake mix cake.
