Hello! I made a mistake of using some cheap sugar to make a buttercream frosting on a July the 4th cake. The frosting was a bit crunchy. My friend just went crazy for the texture. She has requested a birthday cake from me with the same mistake crunchy frosting. I don't think I can replicate the recipe since it was in error. What I am wondering is if any of the sparkles or dust will give the frosting a crunchy texture if I sprinkle some on the top. Please help with any ideas you veteran cake makers may have. Thanks!!

Can you not find the cheap sugar again?

You might try dusting it with some sanding sugar after it is decorated.

CC sells it now.

I recently made a crunchy buttercream (accidently), and I think that the cause was insufficient beating after all of the sugar was added. (I usually mix for a couple of minutes at 2 on my KitchenAid, after the last of the sugar is added, but was distracted and forgot to turn the mixer back on after the distraction.)

if you can't find the cheap sugar............maybe you could spread out your powdered sugar on a sheet pan and lightly mist it with some water and then let it sit for a few hours.....allowing clumps to form in the sugar.....I find when I mistakingly get the "crunchy" icing....it's because I've used a portion of an already opened bag that moisture has gotten to.
