Temperature A/c Question... Please Help!

Hi ladies and gents, just wondering if I may ask.... at what temperature do you keep your houses or bakeries when baking or at all times, I should ask, to keep your fondant and buttercream cakes at their best before pick up or delivery.
I've been having some problems, I guess the temp at my house is to blame, my buttercream is dripping some clear oil (from the butter I guess), I usually make an all crisco buttercream during the summer time but I've had customers wanting half butter half cisco BC. Seems like my butter melts. Also my fondant gets super soft and moves sometimes (mostly after being handled too much for delivery, maybe not getting too much a/c in the car) Anyway, I think I keep my house fairly cold but I don't know.... now I have my doubts, also I believe FL is to blame, soooo humid! Yuk! (if you ask me, FL is the CAKE KILLER state! when I was living in VA I never had this problem, at all!)

First let me tell you how lucky you are to have AC, Ohio has to be a close second with the humidity problem. I don't turn my oven on in this weather as the inside temp of my house has got to be a good 100+ degrees. I would think climate control of 72 would be ideal for cake. Hurry up October, my favorite month of the year!
Thanks so much!! I really appreciate it! OK, so I wasn't far off, I keep my house at 76 during the summer and at 72 when baking!!!! My problem is (now I'm thinking it is the recipe) that when the cakes are done and covered in fondant, sometimes I start seeing a "wet" edge around it, but it is not condensation, it is oily, so I was thinking maybe the BC was to blame. This never happened to me until I moved to FL in Feb of this year and worst during the summer. Anyway, thanks so much!
