I tried to do this the other night w/ just a 9x13 inch cake. I did it w/ a spatula and it worked really well, I just want to know if there is a better way of doing this, especially w/ a round cake? Thanks for your input.

as soon as my cakes come out of the oven I stick my cooling rack on top of the cake and push down until the cake is level with the sides of the pan and hold it for a minute. Then when you let up the cake stays down and it's perfectlly level and better yet no crumbs because you didn't have to cut it.

I did this today! As soon as the cakes were out of the oven, I took my cardboard, put a piece of wax paper between the cake and cardboard and pressed down.

I think it worked pretty well.

The only time I tried to level a cake warm I ruined it. It just wasnt firm enough and a big hunk tore off. Never again. I too press down on it while it is still warm and then level it when it is completely cool if it is needed.
