Does anyone have a roll-out cookie recipe that can be made WITHOUT eggs (due to allergy).

I want to make my DD's soccer team cookies for trophy day, but I have to deal with peanut and egg allergies in the process ...

Anyone know about meringue powder and egg allergies?

I don't have a recipe for you, but meringue powder is contains dried egg whites (its the 2nd ingredient on the can).

This aren't rolled cookies, but they are egg free and one of my favorite recipes!

Crunchy Chocolate Chip Cookies (no eggs)

Preheat oven to 325 degrees. In a large mixing bowl, combine 1 1/2 cups shortening, 1 cup brown sugar and 1 cup sugar. Cream. Add 2 t. salt, 2 t. vanilla and 1 t. baking soda. Mix well. Add 1/4 cup water. Mix. Gradually add 4 cups flour. Stir in a 12 ounce bag of chocolate chips. If necessary, add a bit more water so the dough holds together. Form the cookies by making 1 1/2 inch balls and then pressing them slightly flat. These cookies do not spread much. Bake on ungreased cookies sheets for 14-17 minutes or until lightly browned. These are very crunchy!

virtually all shortbread recipes are egg free, and there are plenty of them formulated for rolling... look for pate sucree.
