they are great and any unused filling can be stored in your frig for up to 6 months; most popular? apricot, strawberry, and raspberry right now but it changes with the seasons icon_smile.gif

I'd just like to add that all fillings are not created equally!! That may sound strange, but I bought some at a restaurant supply store to try them, and it was the nastiest, gluey, disgusting garbage I'd ever tasted! Then after about a year of washing my mouth out with Listerine, I gave it a second chance and bought some from www.countrykitchensa.com (raspberry... same flavor that I tried from the rest. supp. store) and it was wonderful!! Definitely research it before you buy! Find out what brands are good, or only buy one sleeve to test it before you buy six or seven for a big job! Good luck!

ooh, good point Melvira! I buy mine from CK, believe Country Kitchen uses the same product. Real fruit in the filling, delish!

red raspberry is my #1 choice among my brides. Unopened, it has a shelf life of forever; keeps a long time in the frig (but I never have an open sleeve more than 3 weeks ..... use it a LOT for samplings).

I personally don't like the taste of bavarian creme, but I made a groom's cake using the sleeve bavarian and it got rave reviews .... if the customers love it, that's good enough for me! thumbs_up.gif

This is what I use. Apologies in advance, I dont remrmber where I came across this info, wish I could give some credit!

Gourmet fillings ready to use as filling in your cakes.
STORING: Store in the refrigerator after opening. An opened tube will keep 6 months in the refrigerator. I usually tie the end off with a rubber band and then put them in Tupperware. Some ladies have frozen them with success.

Amount of Pastry Filling Needed - This is the approximate amount of filling needed. Different fillings may vary slightly. Heart shaped cakes may take a little less filling than rounds, square shaped cakes may take a little more than rounds. One sleeve of filling equals 3 cups.

Rounds
5" 1/4 cup
6" 1/3 cup
7" 2/3 cup
8" 3/4 cup
9" 1 cup
10" 1 1/4 cup
11" 1 1/2 cup
12" 1 3/4 cup
14" 2 1/3 cup
16" 3 2/3 cups
18" 5 2/3 cups
Sheet Cakes
9 x 13 1/2 cup
10 x 15 2 cups
12 x 18 3 1/3 cup

I thought the same thing! But guess what? They arent according to CK. I was on the phone with customer service (CK) trying to order something that Country Kitchen carries, and the lady said "we are not the same company, totally different, we dont have anything to do with each other" icon_eek.gificon_confused.gificon_eek.gif (I dont think it was the first time she heard that question). Anyway, I was really surprised!

My local supply shop carries the Henry & Henry brand. So far my family loves the raspberry, strawberry and lemon. My cake for class tomorrow will be filled with bavarian cream. I also have the cream cheese filling in my pantry that I want to use next week.

My most used are raspberry, strawberry, lemon, and Bavarian cream.

My customer and I loved the coconut in a swiss chocolate cake.

I also mixed a bluberry and cream cheese together and filled a yellow cake a couple of times. I didn't like the taste of it by itself but got rave reviews from people that ate the cake with the filling in it.

I also mixed the strawberry and cream cheese and filled a strawberry cake. That too got many compliments.

I use Lawrence Foods brand fillings. My most popular are red raspberry, strawberry (in the summer and fall, I slice fresh strawberries over the strawberry filling, and it is really yummy), bavarian cream, and chocolate cream. I don't care for the bavarian cream and chocolate cream fillings, but my customers love them. The lemon and key lime are very tasty, too. Oh, and apple. It is very good with spice cake in the fall. Sleeve fillings are great ... they really are a time saver, and they taste great, too!

I'm adding my name to the "don't like the bavarian creme" list. I tried mixing it with fresh bananas and I just don't like how it tasted. My son didn't like the chocolate bavarian creme, but at work they ate it all up!

The lady i buy it from said the kids don't like the sleeve chocolate bavarian creme?

I have tried and like the rasberry, strawberry, cheesecake, and lemon. I purchased but have not tried the cherry. BTW the bag says Allen. Anybody else buy that one?

i have bought mine at two different cake stores, but no idea on the brand.
(nycake.com & candylandcrafts.com)
I usually buy the same ones, cause it's all my family like. I use Pineapple, soooooo good. and i just recently bought the raspeberry one, i also like that one. I was told to keep in the fridge after opening for only 3 months at most. I've kept it longer w/out a problem.

I get the CK products filling from my Cake decorating supplier. I got Allen brand from a grocery store that was closing their bakery department. They both were good. The cream cheese from CK was thicker than the Allen brand. Got a bunch of Allen apple and haven't tried them yet. At $1 a sleeve I took everything I could get my hands on. I didn't hear about the sale till it was almost too late. icon_cry.gif I was in the grocery store the day the sleeves went on sale but I was being a good girl and staying away from the bakery department so I didn't know about it til a friend called the next day. If I'd known about it sooner I'd probably spent the money for paying my bills for the month. icon_rolleyes.gif

I've never tried the banana flavor. For my banana cream filling, I layer bavarian cream with fresh sliced bananas, and people really like it. icon_smile.gif
