If you are making fondant (like mmf) you can make it anytime and just make sure it is sealed up well in saran wrap. Just microwave it a few seconds before you want to use. It will warm it up just enough to make it easier to work with. You can (and should) make bows or anything you want firm on the cake ahead of time. If you just a gumpaste or a mix of fondant and gumpaste it will dry much quicker than fondant alone. (still leave yourself a day or two for them to dry enough to hold shape.) Anything than will just be laid on the cake, like dots, stripe ect. can just be done at the time you are covering the cake.
