Why Does This Keep Happening?

Sorry, I wish I had a picture, but this is about tiered cakes.

My cakes are levelled nice and straight and then th icing is put on straight and flat. BUT, when it comes time to stack the cakes, I can never get them to sit flat on the tier below! EVERYTIME!!! Whenever I do wedding cakes, I end up using ribbon or fondant on each tier to hide the ugly gaps between the tiers.

What am I doing wrong and how can I fix this? I seperate the tiers with cake boards. help please? I want my cakes to sit flat like dummy cakes! Am so frustrated.

Maybe you have a long dowel making it off.

Are you cutting your dowels too long? If they are too high they will leave a gap when you but your board on.

Have you used a level to check your cakes before you stack? I'd also check the length of your dowels.

Cut your dowells slightly shorter than the cake, about 1/4 inch. Your cake compresses overnight if you are waiting to decorate, so when you go to decorate there is a space. Cakes always compress, so if you do this, you won't end up with spaces so much and they'll also connect better.
